Fat-Free and Delicious Apple Oatmeal Pancakes

1 1/4 cups sifted all-purpose flour
1/2 cup Old Fashioned Oatmeal
3 teaspoons baking powder
1 tablespoon sugar or brown sugar
1/2 teaspoon salt
1 beaten egg
1+ cups of non-fat milk (till consistency that you prefer)
2 tablespoons Jake and Amos Cinnamon Applesauce

Combine dry ingredients. Combine egg, milk, and applesauce; add to dry ingredients, stirring just until moistened. Bake on hot griddle. Makes about 12 dollar-size or 8-4" pancakes.

Variations: Add slices of fresh apple to batter

Toppings: Jake and Amos Apple Butter, Jake and Amos Dutch Apple Jam, or Pure Maple Syrup

Grilled Meatloaf

Meatloaf

1 cup diced onions
1/2 cup diced shiitake mushrooms (or regular mushrooms)
2 teaspoons canola, sesame, or olive oil
1/4 teaspoon dried thyme
1 bag of loose soy burger, textured protein or 12 ounces of extra-lean ground beef
2/3 cups of fresh bread crumbs (made from high soluble fiber whole grain bread such as Arnold's 10 or 12-grain bread)
1/4 cup diced sweet red peppers
2 tablespoons reduced-sodium ketchup
2 egg whites
1 tablespoon snipped fresh chives or 1/2 teaspoon dried chives
1 tablespoon minced garlic

Sauce

1 cup tomatoes, chopped
2 tablespoons reduced-sodium ketchup
1 tablespoon chopped dill pickles
2 teaspoons olive oil
1 teaspoon minced garlic
1/2 teaspoon red wine vinegar

To make meatloaf: in a 1-quart saucepan over medium heat, cook the onions and mushrooms in the oil for about 5 minutes, or until soft. Add the thyme. In a large bowl, combine the soy burger (or beef), bread crumbs, peppers, ketchup, egg whites, chives, garlic, and cooked onions and mushrooms. Mix well. Shape into a 1"-thick oval loaf. Grill on gas grill or bake in oven. If using beef, place on some kind of rack so that excess grease drops down and does not soak into meatloaf. Bake at 350° for 30-35 minutes. If using soy burger firmly pack into loaf pan and bake at 350° for 25 to 30 minutes.

To make sauce: In small saucepan over medium heat, combine the tomatoes, ketchup, dill pickles, oil, garlic and vinegar. Bring to boil and simmer for 5 minutes.
